Meal Prep…

Has proven to be so important to me. I didn’t have time (find the time) to do meal prep Sunday or Monday. Monday for lunch I had a frozen meal and I was so sad because it wasn’t as tasty and satisfying as what I would make myself. Today I took fresh salad and tuna and that was delicious and so much better than the frozen meal. So, tonight we had some reprieve in our schedule and I started meal prepping right away.

I grilled chicken for all week and made quinoa too. Can I just say that I love quinoa! I was only introduced to this super food 3 years ago but really took to it. I just make it in water, but you can boil it in stock if you would like. It goes great with everything and loaded with protein.

It is a little point heavy, but so good for you. I love it in salad. I’m waiting for the chicken to cool and then I will slice it and weigh it out.

This is Me….

My name is Stephanie and I am 29 years old.

I have a normal 8-5, Monday - Friday job.  Some days, the 8-5 gets extended if I have a large project I am working on.  I am in a committed relationship.  She is a teacher.  We have a dog named Bruno.  We are active in our community and our church.  I mention all these things because it plays a large role in my weight loss journey.  Britt, my partner, and I started Weight Watchers 2 weeks ago.  We are off to a great start.  She has lost 10lbs and I have lost 7lbs.  Not every day do we feel like exercising and not every day do we do the most stellar job of picking our meals, but we are making a difference.  I feel great to say that we have not exceeded our points since starting.  Small victory there.

I saw someone post something about blogs that dont just have pretty pictures.  I need to do more of the trials and tribulations and less of the eye candy.  I have to confess that the pictures do bring me some encouragement, but….

reading your real world words,

that would encourage me even more.

I will post pictures from time to time, but I vow for it to be more of my own.

Week 2 of Weight Watchers; lost 2lbs this week for a total of 7lbs. I’m going to challenge myself to more workouts this week.  I’m looking forward to adding smoothies to my meals this week.  I love the Run Zombies app.  I am also going to start the Nike Training App this week.
