Has proven to be so important to me. I didn’t have time (find the time) to do meal prep Sunday or Monday. Monday for lunch I had a frozen meal and I was so sad because it wasn’t as tasty and satisfying as what I would make myself. Today I took fresh salad and tuna and that was delicious and so much better than the frozen meal. So, tonight we had some reprieve in our schedule and I started meal prepping right away.
I grilled chicken for all week and made quinoa too. Can I just say that I love quinoa! I was only introduced to this super food 3 years ago but really took to it. I just make it in water, but you can boil it in stock if you would like. It goes great with everything and loaded with protein.
It is a little point heavy, but so good for you. I love it in salad. I’m waiting for the chicken to cool and then I will slice it and weigh it out.
